🇬🇧🌟Celebrating our island’s culinary evolution🌟

Take a glimpse at the refined menu from the State Banquet held on the eve of Independence Day, on Sunday 20th September 1964. A true reflection of sophistication, featuring a decadent w**e list showcasing the finest France has to offer 🍷 and a dessert w**e coming all the way from the renowned Porto region of Portugal. 🍇✨

On Friday 20th September, exactly 60 years to the day, this banquet will be recreated in a unique evening celebrating this national achievement. Taste History food historian Dr Noel Buttigieg will be offering deeper insights into his research on Maltese culinary history of the 20th century.

While all preparations were laid for the Santa Maria Convoy to embark on its journey to reach Malta, the local authorities planned a strategy of how to effectively unload and store the precious cargo. The “most secret” plan, known as 𝐎𝐩𝐞𝐫𝐚𝐭𝐢𝐨𝐧 𝐂𝐞𝐫𝐞𝐬, focused on food transportation and storage infrastructure within the immediate vicinity of the Grand Harbour.

As soon as the ships of Operation Pedestal limped into Grand Harbour, Operation Ceres was put into effect. Operation Ceres entailed the mobilisation of all dockyard workers and 3,000 army personnel working night and day to unload the delivered supplies. Ceres had been laid with the view of unloading far more than the eventual five ships that finally reached the Grand Harbour.

The pork ribs draw inspiration from the 🐽pig farm tended by submariners on Manuel Island, including those courageous crew members of the HMS Safari who embarked on sorties against Axis convoys. Our mashed potatoes, enriched with condensed milk, reflect a wartime rationing staple in Malta that continues to be cherished in Maltese kitchens.

A 𝘄𝗶𝗻𝘁𝗲𝗿 𝗵𝗮𝗿𝘃𝗲𝘀𝘁 and one of the oldest edible vegetables in the world, there are now over 400 cultivated varieties of Brassica oleracea (cabbage). A staple of humble potages and gruels 🍲 over the centuries, 𝓸𝓷𝓲𝓸𝓷 𝓪𝓷𝓭 𝓬𝓪𝓫𝓫𝓪𝓰𝓮 𝓼𝓸𝓾𝓹 was also often consumed on the ships of corsairs and the fleet of the Order of St John ⚓️.

The ancient Egyptians, Greeks, and Romans believed that eating cabbage at banquets could prevent inebriation from w**e 🍷, a custom that has its mythological roots in the enmity between Dionysus and King Lycurgus of the Edones.
According to the legend, cabbages grew from the sand where Lycurgus’ tears had fallen😭. Interestingly, cabbages are never grown close to vineyards just in case bees transfer their odour to grapes 🍇. What’s more, research undertaken at a Texan University discovered an extract from cabbage, used to treat alcoholism. Don’t diss your myths!!
