#ขนมดู ขนมพื้นบ้านทางภาคใต้โดยเฉพาะ จ.สงขลา 👇 Khanom Doo is a traditional delicacy of Southern Thailand, reflecting the region’s rich culinary heritage.
The History of Khanom Doo
“Khanom Doo,” also known in some southern Thai communities as “Nom Doo” or “Khanom Doo Nee,” is a traditional dessert native to Songkhla Province, particularly the Sathing Phra Peninsula and communities surrounding Songkhla Lake. The dessert is made from locally available ingredients, including glutinous rice flour, roasted rice, coconut, coconut milk, and palm sugar, all of which have long been closely connected to the way of life of local people.
According to local oral traditions, Khanom Doo originated from the daily lives of villagers in the past. During the rainy season, traveling to markets and purchasing food became difficult, so families made use of ingredients readily available in their households to create sweets that could be prepared and enjoyed at home. Over time, this practice evolved into a culinary tradition that has been passed down through generations.
As for the origin of the name “Khanom Doo,” there is no definitive documentary evidence to confirm its etymology. However, a widely circulated local explanation suggests that the word “Doo” may be derived from the Thai word ruedu (ฤดู), meaning “season.” Since the dessert was traditionally associated with the rainy season, the original name may have gradually been shortened in local southern dialects, eventually becoming “Khanom Doo” or “Nom Doo” as it is known today.
If there is one ingredient that can be considered the heart of Khanom Doo, it is undoubtedly palm sugar. The areas surrounding Songkhla Lake have long been important centers of palmyra palm cultivation, making the palm tree one of the cultural symbols of the province. Palm sugar produced from the sap of the palmyra palm is renowned for its distinctive aroma, rich color, and mellow sweetness, qualities that have made it a key ingredient in many traditional southern Thai desserts, including Khanom Doo.
The dessert’s distinctive flavor therefore comes not merely from its sweetness, but also from generations of local wisdom in processing and utilizing palm sugar, a tradition deeply rooted in the culture and daily life of Songkhla’s people.
Another characteristic that distinguishes Khanom Doo from many other Thai desserts is its coating of finely ground roasted rice flour. When picked up by hand, a light dusting of white flour often remains on the fingertips. In some communities, it is even said that if no flour sticks to your fingers, it may not be an authentic traditional Khanom Doo.
Many people describe Khanom Doo as a “cousin” of Khao Tu, another traditional Thai sweet made with roasted rice. However, Khanom Doo is generally softer, moister, and more fragrant, with the distinctive aroma of palm sugar setting it apart. These qualities have helped preserve its place as one of Songkhla’s most cherished traditional desserts and a lasting taste of local memory.

ประวัติความเป็นมาของขนมดู
“ขนมดู” หรือที่ชาวใต้บางพื้นที่เรียกว่า “หนมดู๋” หรือ “ขนมดูนี่” เป็นขนมพื้นบ้านเก่าแก่ของ จ.สงขลา โดยเฉพาะบริเวณคาบสมุทรสทิงพระและชุมชนรอบทะเลสาบสงขลา ขนมชนิดนี้ทำจากวัตถุดิบที่หาได้ในท้องถิ่น ได้แก่ แป้งข้าวเหนียว ข้าวคั่ว มะพร้าว กะทิ และน้ำตาลโตนด ซึ่งล้วนเป็นผลผลิตสำคัญในพื้นที่
ตามคำบอกเล่าของคนเฒ่าคนแก่ในพื้นที่ ขนมดูเกิดขึ้นจากวิถีชีวิตในอดีต เมื่อเข้าสู่ฤดูฝนการเดินทางออกไปจับจ่ายซื้ออาหารเป็นไปด้วยความยากลำบาก ผู้คนจึงนำวัตถุดิบที่มีอยู่ในครัวเรือนมามาดัดแปลงเป็นขนมสำหรับเก็บไว้รับประทาน จนกลายเป็นภูมิปัญญาด้านอาหารที่สืบทอดต่อกันมาหลายชั่วอายุคน
ส่วนที่มาของชื่อ "ขนมดู" ยังไม่มีหลักฐานทางเอกสารยืนยันแน่ชัด แต่มีคำอธิบายที่ได้รับการเล่าต่อกันอย่างแพร่หลายในท้องถิ่นว่า คำว่า "ดู" อาจมาจากคำว่า "ฤดู" ในสำเนียงภาคใต้ เนื่องจากขนมชนิดนี้สัมพันธ์กับการทำกินในช่วงฤดูฝน ชาวใต้ซึ่งมักออกเสียงคำให้สั้นลง จึงเรียก "ขนมฤดู" ย่อเหลือเพียง "ขนมดู" หรือ "หนมดู๋" ในที่สุด
หัวใจของขนมดูคือ น้ำตาลโตนด เพราะพื้นที่รอบทะเลสาบสงขลาเป็นแหล่งปลูกตาลโตนดที่สำคัญมาช้านาน จนกลายเป็นหนึ่งในสัญลักษณ์ทางวัฒนธรรมของจังหวัด น้ำตาลโตนดที่ได้จากต้นตาลมีความหอมเฉพาะตัว สีเข้ม และให้รสหวานละมุนต่างจากน้ำตาลอ้อยหรือน้ำตาลทรายทั่วไป จึงถูกนำมาใช้เป็นวัตถุดิบหลักในขนมพื้นบ้านหลายชนิด รวมถึงขนมดูด้วย
รสชาติหวานหอมของขนมดูจึงไม่ได้มาจากน้ำตาลเพียงอย่างเดียว แต่เป็นผลจากภูมิปัญญาการใช้น้ำตาลโตนดซึ่งผูกพันกับวิถีชีวิตของชาวสงขลามาอย่างยาวนาน และลักษณะพิเศษของขนมดูคือ หากใครใช้มือหยิบมารับประทานด้วยมือก็จะทิ้งแป้งสีขาวติดมือไว้นิดหน่อยนั้นแสดงว่ามันคือขนมดูของแท้
หลายคนเปรียบขนมดูว่าเป็น "ญาติของข้าวตู" เพราะมีส่วนผสมของข้าวคั่วคล้ายกัน แต่ขนมดูจะมีเนื้อสัมผัสที่นุ่ม ชุ่ม และหอมน้ำตาลโตนดมากกว่า

สัปดาห์แห่งอาหาร วัฒนธรรม และความสร้างสรรค์ของสงขลา
ที่จะพา “รสชาติของเมือง” เชื่อมโยงผู้คน ชุมชน วัตถุดิบท้องถิ่น และบทสนทนาระดับสากล
ตลอด ช่วงเย็น วันที่ 5 - 7 มิถุนายน วัน พบกับกิจกรรมสาธารณะมากมาย
ทั้งตลาดอาหารและงานคราฟต์ การแสดงสินค้า การแข่งขันออกแบบอาหารสร้างสรรค์ เวิร์กช็อป และการสาธิตอาหารจากเชฟไทยและเชฟนานาชาติ
ภายในงานมีกิจกรรม 𝗞𝗶𝗰𝗸 𝗢𝗳𝗳 เปิดเมือง 𝗦𝗼𝗻𝗴𝗸𝗵𝗹𝗮 𝗚𝗮𝘀𝘁𝗿𝗼𝗻𝗼𝗺𝘆 𝗖𝗶𝘁𝘆 ในวันที่ 6 มิถุนายน 2569 เวลา 17.00 น.โดยได้รับเกียรติจาก ผู้ว่าราชการจังหวัดสงขลา เป็นประธานในพิธีเปิด
เราจะร่วมตีความ “รสชาติของสงขลา” ผ่านวัตถุดิบท้องถิ่น เรื่องเล่า เทคนิคการปรุง และอัตลักษณ์ของพื้นที่ตลอดช่วงเย็นของวันที่ 5–7 มิถุนายน 2569 พบกับกิจกรรมสาธารณะหลากหลาย ได้แก่

* ตลาดอาหารอัตลักษณ์สงขลา จากทั้ง 16 อำเภอ 40 กว่าร้านค้า
* การจัดแสดงอาหาร ผลิตภัณฑ์ชุมชน และงานคราฟต์
* Showcase อาหารและงานหัตถกรรม
* การแข่งขันออกแบบอาหารสร้างสรรค์
* เวิร์กช็อปและการสาธิตอาหารจากเชฟไทยและเชฟนานาชาติ
* การแสดงศิลปวัฒนธรรมและการแสดงดนตรี
* การประชุมวิชาการนานาชาติ
* กิจกรรมแลกเปลี่ยนเรียนรู้ด้านวิทยาการอาหารของเครือข่ายเมืองสร้างสรรค์องค์การยูเนสโก ทั้งในประเทศและต่างประเทศ
* กิจกรรมยกระดับอาหารชุมชนสู่สากล
