Love holiday antipasti and baking yummy breads

1 pound ricotta cheese

1 dozen eggs

1 pound hot or sweet sausage cut into 1/2 inch pieces

4 stalks asparagus cut into 1" pieces

Red or green peppers cut into strips or squares
3 scallion cut about 1 inch

1/4 lb sliced mushrooms

2 chopped tomatoes if desired

In a large bowl mix well the eggs, ricotta cheese. Season with salt and pepper, set aside. Brown sausage in olive oil. Remove sausage from pan and add the vegetables to the pan and cook until softened. Drain vegetables and add them along with the sausage to the cheese mixture. Stir well. Pour into a 9x13" baking dish and bake at 350-375 until set.

You can use whatever vegetables you like in this
