Marine Science Monday - Sea Pickle 🌊🥒
No, we didn’t drop a pickle in the marsh. That’s Salicornia, also known as sea pickle (or glasswort, or pickleweed, depending on who you ask).
This plump, segmented succulent is a salt marsh superstar. Those squishy stems store water and manage the intense salt levels in its environment. True leaves? Who needs ’em. Sea pickle photosynthesize with its stems and called it a day.
It’s also edible. Salty, crunchy, & shows up in fancy seafood dishes.
Beyond being a snack, sea pickle stabilizes sediment, provides habitat for invertebrates and birds, and is one of the first plants to colonize bare mudflat (also called a pioneer species).
Bonus: it turns red-orange in the fall. Keep an eye out on your next marsh walk. 🍂
