Collar City Mushrooms Growing fresh mushrooms at Indian Ladder Farms

Collar City Mushrooms is one node in the great interconnected mycelial mat providing the substrate out of which is growing a movement that will impact the way we see the world. The fungi kingdom includes life forms that can offer nutrients, that include healthful medicinal properties, that can mycoremediate petroleum-based wastes, that enrich and renew soils, that can induce mind-altering spiritual growth, and that can be used as building materials, textiles, and biodegradable packaging. Understanding the mushroom and the way it interacts with its environment will help us save ourselves and the way we live.

One of our goals is to educate as many people as possible about the wonders of fungi! Turning the forests and fields into classrooms is a great way for curious Myco-learners to get eyes, hands, and minds into the mycelium. The annual field trip with the Rensselaer Polytechnic Institute biopunk class taught by Kathy High is always such a fantastic time. We talk about the art, science, utility, and philosophy of mushrooms!

Beech! These delicious shrooms take a long time to colonize, but boy are they tasty! Nutty, firm, and they don’t shrink down so much when cooked. Great in soups, sauces, or as sides! We love them and are glad they are back for a splash the next couple weeks!

After a 3 forest day, we had collected 12 different edible wild fungi! We cooked them all up for dinner, plus experimented with a new soup recipe (stay tuned). Today we ate 17 different mushrooms. Tastes, textures, mouthfeels, smells, all unique! Black trumpets, chanterelles, lobster of the woods, shrimp of the woods, comb tooth, hedgehogs, honey mushrooms, blewits, indigo milky, shrimp russula, maitake, gem studded puffballs, w**e caps, dehydrated boletes and shiitake, cultivated oysters and chestnuts! Fungi provide so many unique colors and flavors to your culinary experiences. Try a new one today!
