Wolves Lovers + Thieves [] is a Sonoma winery specializing in sparkling wines made from unique grape varieties using three distinct production methods — and their name tells the whole story.
🐺 Wolves represents pétillant naturel — the ancient method. Grapes are harvested, fermented, bottled with a touch of yeast and sugar for a secondary fermentation, and left completely undisturbed. The result? Bubbles that are young, fresh, and a little cloudy.
🩷 Lovers represents the traditional Champagne method. Same start, but the wine rests on its lees until the bottles are riddled, the yeast disgorged, and a sugar dosage added (or not). The result? Bubbles that are soft, luxurious, and pristine.
🥂 Thieves represents the Charmat method — secondary fermentation happens en masse in a tank rather than bottle by bottle, then the wine is dosed and bottled. The result? Bubbles that are crisp, bright, and just a little mischievous.
